3. Do not put meat on the grill until the heat is right. The fluctuation in temperatures will cause your food to dry out or burn. If you are using a charcoal grill, make sure that the coals are totally gray prior to putting the meat on the grill.

4. If you sear the meat, it would lock in juices and taste, however do not cook the meat at that high temperature all the time. When you have seared both sides, adjust the temperature to the lower setting. This will guarantee that your meat is full of flavor and tender.

5. Do not poke the meat when it is cooking. Poking holes in meat will cause the juice inside to leak out into the bottom of the grill. This not only will make your meat dry and look bad, but in addition can ruin your grill.
